181. Cornbread waffles

Chilli cheese cornbread waffles
4 waffles

1 cup plain wholemeal or white flour

3/4 cup cornmeal

2 tspns baking powder

1/2 tspn sea salt

Pinch chilli flakes

1 x 15ml tblspn honey

2 large eggs

1 3/4 cups buttermilk

60g butter or margarine, melted

1/2 cup grated, loosely packed cheddar cheese

Non-stick spray
 
Topping:

· Scrambled eggs with chopped basil and green onions

· Sliced mushrooms sautéed in butter

· Seasoned oven roasted cherry tomatoes mixed with chopped basil straight out of the oven
 
Sift first 4 ingredients into a large mixing bowl and add pinch of chilli flakes.
Whisk wet ingredients and cheese until combined.  Add wet ingredients to dry and fold in carefully until just combined (don’t over-beat).
Spray waffle iron well with cooking spray and heat to desired setting (I used the low-medium setting ’2′).
Pour batter carefully onto waffle iron, smoothing out with a spatula to cover the whole grid – be careful not to pour too much, this will depend on your waffle maker.
Cook waffles until indicator beeps, keeping an eye on them.
Keep waffles on a cooling rack covered with foil if you wish to keep them warm.
Butter each hot waffle straight from the waffle maker, spoon scrambled eggs over, making sure to get into the indentations, add mushrooms then tomatoes and basil on top.
 
These waffles would also be great with store bought salsa simmered on the stove and a soft boiled or poached egg, if you like a Spanish style breakfast.

Koka långsamt under lock i ca 15-20 min tillsammans med vanilj + kanelstång + 1 msk sultanrussin. Toppa med 1 tsk messmör natur + osötad sojamjölk.

Raw porridge 
with fresh strawberries
Yield: 4 Servings // Prep: 10 mins

Ingredients
180 grams Rolled oats raw if possible
600 ml Almond milk homemade is best
2 or 3 tbsp Date syrup or dark agave
1 punnet Strawberries sliced

Instructions
Place oats, almond milk and date syrup in a 1L kilner jar.
Put lid on and gently shake to mix.
Soak 3 hours or overnight to soften the oats and blend the flavours.
Serve into breakfast bowls and gently mix in the strawberries.
Et voilà! Divine healthy breakfast.

2 dl grovt dinkelmjöl
2,5 dl mjölk
1 msk rapsolja

Blanda alla ingredienser och stek på medelhög värme. Servera med exempelvis vaniljsockerkryddad, vispad crème fraiche och bär.

160. Lemon poppy pancakes

Ingredients:

1/3 cup old fashioned oats

6oz Lemon 0% Chobani Greek Yogurt

1 large egg white

½ Tbsp poppy seeds

¼ C cottage cheese

 

Directions:

Preheat a griddle on medium low heat.

In a food processor, add oats to create a flour-like consistency.

In a bowl, add oats, liquid egg whites, and poppy seeds. Add Chobani, reserving 2 Tbsp for topping. Mix together.

Coat the griddle with nonstick cooking spray.

Add batter and allow to cook through, flip and let cook a few more minutes. Remove from griddle.

For the topping, add cottage cheese and the 2 Tbsps of Chobani into the food processor and mix together.

Top pancakes with lemon creme (and syrup, if you so desire!) and enjoy!

1 dl mjölk
1 dl mjöl
1 ägg
½ tesked bakpulver
en nypa salt

1. Blanda alla torra ingredienser i en skål.
2. Vispa ihop ägg och mjölk i en skål, vispa sedan i de torra ingredienserna lite i taget.
3. Riv päronet grov och rör ner i smeten med en slickepott.
4. Stek i smör, ungefär en och en halv matsked smet per pannkaka, på medelvärme.
5. Ät med med sirap eller honung, lite vanlig yoghurt eller vispad grädde.

Blood Orange Quinoa Parfait

  • 1/2 – 3/4 cup 2% Greek yogurt
  • 1/3 – 1/2 cup pre-cooked quinoa, chilled
  • 1 blood orange, peeled + sliced
  • handful of toasted pecans
  • squeeze of fresh blood orange juice
  • drizzle of honey or maple syrup
  1. Layer ingredients however you like.
  2. Top with a squeeze of fresh blood orange juice and/or honey or maple syrup.
  3. Best eaten right away.

Makes 4 little ones
Prep: 5 min, Chill: 1 hour
1 1/2 cups soy milk
1 mashed up banana
3/4 cup coconut milk
3 tablespoons of crushed chia seeds
1 tsp vanilla
1tsp cinnamon

1. Blend it all together
2. Pout into individual ramekins and chill for at least 1 hour.

That's it. Seriously.

Ingredienser:
1 mosad banan
4 ägg
250 gram keso
1 dl havregryn
1 påse saffran
 
Sätt ugnen på 200 grader. Lägg alla ingredienser i en bunke och stavmixa till en slät massa. Häll upp i en bakplåtspappersklädd ugnsform och grädda i ugnen i 30-35 minuter.

1 dl sportgryn
1 dl vatten
1 dl mandelmjölk
1 krm salt
1 krm vaniljpulver
1 burk skyr med smak av blåbär
 
Blanda allt utom skyr i en skål och lägg i mikron på full effekt i 1 minut. Ta ut gröten ur mikron och rör om. Bred ut youghurten över hela gröten. Täck skålen med plastfolie och ställ in i kylen över natten.

8 ounces low-fat vanilla yogurt, divided
½ cup mixture of fresh raspberries and fresh blueberries
1 cup granola cereal with raisins, divided

  1. Place 1/3 cup of granola in a parfait glass.
  2. Layer half of the fresh fruit mixture on top of the granola.
  3. Layer half of the granola cereal with raisins on top of the fruit
  4. Repeat layers, leaving some fresh fruit to place on top as garnish
