Serves 1

2 bananas
Peel and cut the bananas into chunks. Freeze overnight. In the morning, add to the food processor and blend until smooth and creamy (I use a hand blender and it works great as well). Transfer to a serving bowl.

1 rhubarb stalk
3 Tbsp water
1 Tbsp rose water
2 tsp honey (or maple syrup for a vegan version)

Cut the rhubarb into 1 cm pieces. Add into a pot with water and rose water. Cook until the rhubarb becomes tender and the pieces fall apart (about 5 minutes, which is more than enough to prepare your ice cream). Add honey, stir well and serve with banana ice cream.

3 cups frozen watermelon chunks
1 cup milk (almond milk)
2 tbsp granulated sugar (stevia)
 
Instructions
Combine all ingredients in a blender and process to milkshake consistency.
Taste and add more sugar as needed.

För två smoothies behöver du:
ett paket fryst mango (finns bland bär etc i frysdisken)
färsk ingefära (en cm riven)
några deciliter vaniljyoghurt
en tesked kardemummafrön
lite mald kanel
en skvätt färskpressad äppeljuice
 
Mortla kardemumman grovkornig och blanda med yoghurten, mangon, den rivna ingefäran och kanelen i en skål. Mixa med mixerstav., Häll på äppeljuice tills du får rätt konsistens. Toppa med lite kanel.

Add all ingredients in a blender and churn. Enjoy cool.

Vanilla Bean Iced Coffee

1/3 cup instant espresso granules
1/3 cup sugar
1 cup boiling water
1 vanilla bean, split and seeds removed
1 (14-ounce) can sweetened condensed milk
2 cups cold water
4 cups milk
1-2 teaspoons vanilla extract (for extra vanilla-y punch)
 
Place the espresso granules and sugar in a bowl and stir in the boiling water until dissolved.  Stir in the vanilla bean seeds. 

Whisk in the sweetened condensed milk and cold water until combined.  Pour the milk into a pitcher.  Stir in the espresso mixture and the vanilla extract.  Chill in fridge for about an hour.  Serve over ice.
